Millet upma, a delicious and nutritious dish made with millet grains. Millet is a gluten-free grain that is rich in fiber, protein, and essential nutrients. Upma is a popular South Indian breakfast dish that is quick and easy to prepare.
Ingredients:
- 1 cup millet grains (any variety like foxtail millet, pearl millet, or finger millet)
- 2 tablespoons oil or ghee (clarified butter)
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 tablespoon urad dal (split black gram)
- 1 tablespoon chana dal (split Bengal gram)
- 1 medium onion, finely chopped
- 1 green chili, finely chopped (adjust to taste)
- 1-inch ginger, grated
- 10-12 curry leaves
- 1 medium carrot, finely chopped
- 1/4 cup green peas (fresh or frozen)
- 1/4 cup chopped mixed vegetables (optional)
- Salt to taste
- 2 cups water
- Fresh coriander leaves, chopped for garnish
- Lemon wedges for serving (optional)
Instructions:
- Rinse the millet grains thoroughly under running water and drain well. Set aside.
- Heat oil or ghee in a pan or kadhai over medium heat. Add mustard seeds and let them splutter. Then add cumin seeds, urad dal, and chana dal. Sauté until the dals turn golden brown.
- Add chopped onions, green chili, grated ginger, and curry leaves. Sauté until the onions turn translucent and lightly golden.
- Add the chopped carrots, green peas, and any other mixed vegetables you’re using. Sauté for 2-3 minutes until the vegetables slightly soften.
- Add the rinsed millet grains to the pan and mix well with the vegetables and spices.
- Pour in 2 cups of water and season with salt. Stir everything together and bring it to a boil.
- Once it starts boiling, reduce the heat to low, cover the pan with a lid, and let it cook for about 15-20 minutes or until the millet grains are cooked and water is absorbed. Stir occasionally to prevent sticking.
- Once the millet grains are cooked and have a fluffy texture, turn off the heat. Cover the pan and let it rest for 5 minutes.
- Fluff the upma with a fork or spoon. Garnish with fresh coriander leaves.
- Serve hot millet upma with a side of coconut chutney, tomato chutney, or sambar. You can also squeeze some lemon juice over the upma for a tangy flavor if desired.
